Marinated Pepper Salad with Pecorino
from Plenty, Yotam Ottolenghi, Ebury Press, 2010
Plenty is a collection of the recipes Yotam Ottolenghi wrote for the Guardian in a column called The New Vegetarian. It seemed appropriate after some time at the column that people would like to have the collection in one volume rather than in slips of paper cut from the newspaper.
Basically this salad is made of capsicum baked and peeled then marinated in a tasty dressing. Therefore, you need to prepare the ingredients well before you want to eat the salad.
Once the capsicums are marinated they are combined with the collection of greens and capers and topped with pecorino.
This is a simple though time-consuming salad which is well worth the effort because it is delicious.
