Chard and Camembert Mini Muffins

From the moment I saw this book and browsed through its pages, I wanted it. It just oozed freshness and style. The recipes are proving to be as good as they look in the photographs.
The muffins are the normal muffin mix but they have chard added. This is precooked before it is added with the cubed Camembert. As usual with muffins the mixture should not be over mixed.
The muffins turned out to be tasty nibbles. We used them as a light meal with an accompanying salad. The remainder were soon gone as snacks throughout the next day.
