Root Salad

From The Naked Chef, Jamie Oliver, Michael Joseph, 1999.

‘This is one of the nicest salads you can make.’ I always find you do have to take Jamie Oliver’s statements with a grain of salt. Over conscientious in his efforts to make people enjoy his food he seems to employ too much hyperbole. Nevertheless, taking this into account, his books do have much that is worth trying.

This salad was a perfectly enjoyable one, though not the 'nicest' of salads. It is a simple one—only three vegetables: carrots, fennel and celery. These are sliced very thinly. With a herb and red wine dressing this makes a quick, crunchy accompaniment to a meal.
