Ispahan Macaron

My partner is a huge fan of pastries and when we went to Paris, as well as taking cooking classes on croissants and macarons, we travelled all over the city hunting out various patisseries: Pierre Hermé, Ladurée, Jacques Genin, Hugo et Victor were some we did manage to fit in in the time we were there. The pastries in Paris are taken to an art form, wonderful creations.

When my granddaughter’s 21st birthday arrived the partner decided to make the famous Ispahan macaron, created by Pierre Hermé. It turned out to be a great success—with some photos here to prove it. The Ispahan is a blend of the flavours of lychee, rose and raspberry and comes complete with a drop of dew on the rose petals.
