Frittata with Spaghetti


Frittata with Spaghetti and Herbs
from Vegetarian Bible, Margaret Barca, Penguin Books, 2008.

A frittata with spaghetti sounded somewhat unusual to me but it was worth a try.

Vegetarian Bible is an unpretentious little book but it seems to be filled with a nice selection of recipes.



The eggs for this frittata are beaten with some milk, ricotta and parmesan. The cooked spaghetti is added with a mixture of herbs. It’s then cooked in the usual manner. When the bottom is done more parmesan is sprinkled over the top with pine nuts and it is placed under the grill.



It turned out to be a pleasant variation on the usual frittata. The spaghetti worked well and the herbs, basil and parsley, gave a nice hint of extra flavour. We ate it with some simple vegetables.
